Hello and Happy April!

Spring is definitely on its way. The sun feels stronger, and I’ve been seeing snowdrops, crocuses, scilla, and daffodils popping up everywhere. The trees are going to explode in blossoms soon as well. This time of year makes winter feel like it was all worth it. A couple of weeks ago, I had a nice trip down South to Florida, to visit family and recharge my solar battery (some pictures included). The trip involved swimming in the gulf and a spring-fed river, cooking and eating lots of great food, and walking around my parents’ cozy neighborhood, marveling at all the azaleas and mango trees.

This month’s class is all about building flavor! In the video, I make lentil soup and a spring pasta salad, to illustrate some simple but very effective, flavor-building techniques. This month’s recipes have a sort of breakfast theme going, since I’ve recently gotten much more into eating breakfast. We’ve got extra luxe oats with apple-pear sauce, sweet potato pancakes, and a fennel, leek and white bean soup (not breakfast, but so nice for spring).

Seasonal Pleasures

⁕ A cookbook that I recently checked out of the library and have been enjoying immensely is Six Seasons by Joshua McFadden. It’s all about cooking with seasonal vegetables, and the recipes read like poems to me :) The author has been both a chef and a farmer, and I love his perspective on produce-inspired cooking.

⁕ I’ve been loving photographer Justin Chung’s instagram lately, specifically the interiors that he shoots (many of the photos are taken on film!). Spring always has me inspired to not only spring clean, but also to do some home improvement, so I really appreciate finding such great interiors inspiration.
